Cookie Recipe Using Natalie's Raspberry Hemp Jam

Cookie Recipe 

Hemp Nut Seed Recipes, #2


Thumbprint cookies

2 cups sifted flour

½ tsp salt

1 cup butter

½ cup superfine sugar

2 tsp vanilla or 1 ½ tsp vanilla +1/2 tsp almond extract

Natalie’s Raspberry Hemp Jam or Natalie’s Orange Pineapple Jam

½ sifted 10X sugar

Preheat oven to 325 degrees.  Sift the flour and salt.  Cream butter, superfine sugar until fluffy and add extracts.  Slowly mix in sifted flour, ½ cup at a time until blended.  Chill 1-2 hours.  Roll quickly into 1 inch balls (do not manhandle). Place 2 inches apart on an ungreased cookie sheet.  Make a deep thumbprint in the center ( I use a thimble to make the thumbprint).  Fill with Natalie’s Raspberry Hemp Jam.  Bake 15 minutes until the cookies are the color of pale sand.  Transfer to a wire rack.  When cool, dust with the 10X sugar.
